Loose database structure

I'm just thinking out loud. I'm wondering if there's any database technology where it's structure does not need to define upfront?

For example it may start off with just one column or roll and user will keep adding more column and roll or table on the fly when they see necessary. The relationship between this rolls and column will just work.
