I have a SQL Server 2008r2 ("SQL1") running very well on a virtual machine with 8 cores. I have a license for 8 cores, that I could use for any version of SQL Server. Now, I want to setup a new server ("SQL2"), again on a virtual machine, but I don't want to buy new licenses. The idea is to have 2 servers with 4 cores each. I believe that SQL1 will run just as fine with only 4 cores. But how can I be sure? Is there a way to disable some cores, without downtime? Or is there a sort of "high water mark" that tracks how much CPU actually uses at peak time?
